Recaredo Winemaker Dinner
Our Winemaker Dinners continue as Alex Bautista arrives from Recaredo and Celler Credo to present their wines on Monday November 7th at 7pm. We planned a 5-course menu around 7 Recaredo wines, including Turó d’en Mota, Particular and Estrany amongst others.
Recaredo is unique in style and history. Established in 1924 by Josep Mata Capellades, the winery only uses grapes from their own 50ha of vineyards. Since 2006 the vineyards are farmed biodynamically without synthetic fertilizers, herbicides or pesticides; Recaredo’s first Demeter-certified cavas from vintage 2010 were also the first cavas to receive the certification. All the cavas are matured with natural cork, with both the remuage and disgorging done by hand without freezing the neck. To honor the Terroir and truly show the variety, place and vintage of each wine, all Recaredo cavas are made Brut Nature, without a dosage.
Celler Credo, started in 1990, shares the values and philosophy of Recaredo, but aims to showcase and interpret Xarel·lo as still wines. The wines are made over lees, sometimes macerated or even with stems, without adding cultured yeasts or sulphites.
